Peruvian Green Beans

This delicious and spicy Latin-American recipe uses Aji Amarillo paste, a Peruvian hoy sauce that if you can't find locally you can always order from Amazon. Or substitute another hot sauce like Sambal Oelek.

Peruvian Green Beans - another delicious vegan dish from Scoroncocolo

This recipe is dairy-free / non-dairy, egg-free, optionally gluten-free, optionally grain-free, nut-free, peanut-free, vegan / plant-based, and vegetarian.

Blanch the green beans in boiling salted water for three minutes or more and and the dry them thoroughly before cooking them.


Green Beans a la Peru


INGREDIENTS

2 Tbsp Olive oil or Sesame oil

8 oz green beans, ends trimmed

1 red onion, chopped

3 to 5 cloves of garlic, minced

1 or 2 Tbsp aji amarillo (or other mild chili) paste

2 Tbsp balsamic vinegar

3 Tbsp low-sodium soy sauce

2 tsp cumin

1 tomato, seeded, sliced into narrow strips

1/4 cup chopped Parsley or Chives


INSTRUCTIONS

Blanch Green Beans in boiling salted water for 3 or 4 minutes


In a large sauté pan or wok, heat oil over medium-high heat. Add Onion and cook 5 minutes.


After blanching and drying beans, add to onions and stir fry for 3 minutes.


Add Aji Amarillo paste, garlic, vinegar, soy sauce and cumin and cook for another 3 minutes


Add tomatoes and cook 1-2 minutes. Remove pan from heat and add Parsley. Serve warm.
